Sashimi represents George Leslie Mackay, who is the leader fish. Scallop, crab stick, fresh oyster, and salmon roe (representing Ahua, Chuang Tien-neng, Yeh Shun, and Ko Cui, respectively) are all students of Mackay. When Mackay went around preaching the gospel, a bunch of students often followed him, traveling all over the place, leaving behind their figures and footprints.

When Mackay was in college, he took medical credits and understood medical principles, especially excelling in tooth extraction. He found that the tooth extraction techniques in Taiwan were too barbaric and outdated, causing pain to the patients. Therefore, he used advanced tooth extraction techniques to help people extract teeth. According to Mackay's recollection, he had been in Taiwan for nearly 30 years and had extracted over 30,000 teeth.

After arriving in Taiwan, Mackay found that the people lacked new knowledge. What they learned was mainly the traditional imperial examination system and rote memorization. In order to facilitate missionary work and impart knowledge to the residents, Mackay wanted to increase visibility through befriending learning. He initially used the outdoors as a classroom and casually imparted knowledge. As more and more people came to learn, he raised funds to build Oxford College for the benefit of more students. Later, he also founded the Tamsui Girls' School, ushering in a new chapter of Western-style education in Taiwan.

Tamsui is an international port with a considerable number of foreigners arriving here. Mackay enjoyed making friends, so he was well acquainted with the foreigners who came to Tamsui, often finding time to gather and chat with them, easing their homesickness. John Dodd, William Campbell, James Laidlaw Maxwell, George Leslie Mackay, and British consuls from various periods were all familiar friends. They would get together to enjoy hearty steaks and have casual conversations.

In addition to preaching, Mackay also provided basic medical care for the residents, and he even received donations to establish the Hobe Mackay Clinic. During medical consultations, Mackay would carry a jar of various medical tools with him, making it convenient for treating patients. He sometimes also applied poultices.

The spread of Mackay's gospel started from Tamsui and gradually extended to Sanzhi, Shilin, Lujhou, Xindian, and other places. The entire northern Taiwan was almost his missionary scope, leaving behind countless footprints and churches that were unmatched.

Mackay often went to the indigenous tribes to preach, with the northern, eastern, and central regions being the main areas of his missionary work, particularly the Kavalan area where he frequented the most. Due to his frequent visits to the Kavalan area, he developed a deep bond with the local indigenous people. When Mackay visited indigenous tribes, he would bring a lot of food to share with everyone, and his visits were always warmly welcomed. Even after Mackay passed away, there were indigenous people who, despite the long journey, came to bid him a final farewell, indicating the irreplaceable position Mackay held in their hearts. Therefore, the Kavalan people revered Mackay as a father or teacher.

Mackay's missionary base was located in Hobe. After arriving in Taiwan, he found that the local vegetable varieties were limited. Therefore, he actively introduced various new seeds, hoping to enrich the variety of vegetables in Taiwan. His students followed suit and planted seeds in various places, expanding the planting area. As a result, Hobe gradually became one of the areas with the most diverse vegetable varieties in Taiwan. Zhang Congming skillfully used these vegetables to cook a variety of rich Western-style dishes, sharing the delicious food with everyone.

Shortly after arriving in Taiwan, Mackay married Zhang Congming (Zhang Ceng), a woman from Wugu Keng, in order to integrate into Taiwanese society. They had two daughters and a son, each with their own achievements. Their son, Little Mackay, became the first principal of Tamkang High School and was also a driving force behind the construction of the Tamsui Church. Mackay's second daughter, Together with Li (Peaceful Aunt), married Mackay's student Co-we-si (Co Jiu). Their descendants, Co She-jie, Co Wei-lin, and others, are well-known both at home and abroad.

Mackay was a missionary whose responsibility was to spread the Bible and benefit the people. Demonstrating the spirit of the feeding of the 5,000 was a common image of Mackay during his missionary work. He was generous in sharing with others, adapted to local customs, sat on the floor, ate when meals were served, and introduced his favorite foods to everyone, believing that sharing joy with others is better than enjoying it alone.
